Homemade Coconut Cashew Butter
Yield: about 1 cup plus 2 tablespoons
- 1 ½ cups roasted cashews
- 1/8 teaspoon salt
- 1 tablespoon sugar
- 1/4 cup coconut oil
In the bowl of a food processor, combine cashews, salt, and sugar. Process for three to five minutes until the cashews turn into a smooth butter, scraping down the sides as needed. Add the coconut oil and vanilla bean seeds to the food processor and process until combined.
